Here is a thank you note sent from one of our client families to us and to the farmers at Grinnell Heritage Farm:
I just wanted to thank you so much for all the wonderful food! My 6 year old who only ate canned green beans, potatoes, corn and canned peas before this summer is enjoying new foods daily. He learned to eat salads once a week. He could not believe that all we were eating was a salad. But 3 different greens, spinach, cucumber, tomato and onion topped with some Walmart rotisserie chicken and he will eat it!
Now he is trying zucchini. We took zucchini and cut it in half, scooped out the center and placed them on a baking sheet. I took the scooped zucchini and chopped summer squash, onion, red pepper and garlic… sauteed it until tender and filled it back in the zucchini boat and topped it with shredded Parmesan cheese and baked it at 350 degrees for 30 minutes until tender. He ate it!
And with stir fry once a week he is eating snow peas, broccoli, carrots, onions, peppers and kohlrabi! He eats it because it comes from HIS farmer!
